2020 Spring                                 

Note: On all of the red wines, please store in a cool dark place or wine refrigerator if you have one! When you open them, pour a glass, but let it sit for around 15 min to allow the bouquet to be released as the wine gently warms toward room temperature.   All of these will benefit from a little oxygenation before serving.

Cloak and Dagger - 2015 Conspirators Reserve Syrah

Opaque black garnet color.  Smoky aromas and flavors of smoked marzipan, bacon, chocolate chip cookies, and embers on the nose.  This Syrah has a velvety soft, round yet vibrant, fruity medium-full body and an appealing, medium-long finish.  Much of the medium oak attributes have been integrated to exhibit a smoky vanilla-bomb of a syrah with mysterious appeal.  Pair this wine with coffee crusted smoked pork tenderloin, lamb tagine, or souvlaki.

ONX - 2016 Praetorian

This Tempranillo-dominated wine at 58%, with 29% Mourvèdre and 13% Malbec is another outstanding wine. Roasted coffee, toasted graham cracker and smoky berry aromas show on the nose of this blend.  It offers lots of red and black fruits, black plum, thyme and marjoram, cured meat, spice, and hints of blood orange aromas and flavors. With medium to full body, a fresh, elegant texture, and terrific balance there is a hint of coffee on the finish. Pair with roasted duck, blackened chicken, bbq ribs or really any hearty tomato based dish!

Twin Coyotes  - 2017 Cabernet Sauvignon

This Cabernet Sauvignon is savory and full bodied.  While this is a still maturing wine the tannins are soft and make this one easily consumed while young.  It demonstrates smoky, spicy flavors, and aromas of cedar and spice. The grapes, grown in Paso Robles, experienced warm summer days to develop ripeness but the cool nights allowed the vines to maintain the acidity needed for a balanced wine. Enjoy this bold wine with steak, burgers, flavorful and heartier red pasta sauces, lamb, portabella mushrooms, and gouda or aged cheddar cheese.  Drink now - 2028 

Twin Coyotes  - 2018 Sauvignon Blanc

Fruity, balanced, and with lighter acidity, this wine will be a Summertime favorite. Citrus hits the palette right off the top. There is a fleeting hint of green bell pepper which also appears then disappears really quickly and offers some additional layering to this light Sauvignon Blanc.    Fermented in stainless steel with mineral characteristics and a light, crisp acidity.  Pair with white meats, fish, lobster, clams, and softer more briny and sour cheeses like goat cheese.
